Closure Reminders
Both offices will be closed next Monday, December 25th as well as Monday January 1st in observance of Christmas and New Year’s Day.
Remember, if you are a member of our Monthly Wellness Plan and you come weekly for your planned adjustment on a day that we close, you are encouraged to come in twice either the week prior or the week following our closures.
Dr. Kayla is back at the Derby office!!
We are excited to announce the return of our favorite new chiropractor specializing in the Webster method for prenatal adjustments, as well as pediatric adjustments.
Dr. Kayla is currently taking all of our new patient visits in the Derby office. If you have a friend or family member who is pregnant or has young children, refer them in to Dr. Kayla in the Derby office and they will receive a very special new patient price as they get to know Dr. Kayla.
Dr. Kayla will also be available to serve any current patient of Dr. Pomeroy Chiropractic Wellness at large. When the waiting room is full, we welcome you to give Dr. Kayla a try! You are a patient of the clinic, not a particular doctor, and we welcome all our patients to get adjustments from either doctor at any time.
Dr. Kayla is available Mondays 10am - Noon and 1:30pm - 5:30pm, as well as Wednesdays from 8am to Noon and 1:30pm - 5:30pm.
Dr. Shawn’s Derby hours are the same as Dr. Kayla’s with the exception of Monday mornings when he is at our Wichita location from 9am - Noon.
Derby office location change in 2024
Speaking of the Derby office hours and doctors, we are also going to be moving sometime in the first half of 2024.
Our new location will be in the little Dillon’s shopping center between Casa Martinez and Novacare. We have floor plans for our new office up on the wall in the waiting room of the Derby location. Take a look! We are excited to bring you a new up-to-date facility, and are looking to expand our service offerings as well!

Same Day Focaccia Recipe

INGREDIENTS:
500g white bread flour
420ml warm water
1 tbsp extra virgin olive oil
1.5 tsp instant yeast
1 tsp honey or sugar
2 tsp sea salt
5 tbsp extra virgin olive oil, to line the pan and drizzle
1 tsp sea salt, to finish
2 Rosemary sprigs, leaves only
METHOD:
Add warm water, olive oil, instant yeast and honey to a bowl and whisk together to combine.
Add the bread flour and mix until you have a dough. Scrap down the sides of your bowl and cover with a tea towel, resting the dough for 15 minutes.
Once 15 minutes in up, do some stretch and folds by picking up a corner of the dough and folding it over the top, repeating on each 4 corners. Cover again and let it rest for another 15 minutes. Repeat the stretch and folds one final time.
Cover the bowl and let the dough rest for 1 hour and 30 minutes at room temperature.
Prepare your baking tray by drizzling 1 tosp of extra virgin olive oil on the bottom, followed by baking paper over the top.
Drizzle an extra 3 tablespoons of extra virgin olive oil onto the baking paper and spread it out evenly on the tray, getting into the corners.
Place your rested dough into the oiled tray.
Fold the dough into thirds, a burrito like shape. Slide it length ways into the tray and flip it upside down so the smooth side is facing up. Cover and proof for a final 1 hour and 30 minutes.
Preheat your oven to 425 F.
Once the dough has finished its final proof, drizzle with olive oil and dimple the dough by pressing your fingers into it. Add any toppings you like. We have kept it simple with rosemary and sea salt but you could add olives, pesto, cheese, garlic butter, sun-dried tomatoes, thyme, mushrooms... the list is endless!
Bake on the lowest rack of your oven for
18-23 minutes. Enjoy warm.
This will last in an airtight container for 2 days.
